Ingredients
4 ripe pears (Bosc or Asian), peeled, cored, and roughly chopped
4 slices fresh ginger
1 cinnamon stick
2 tablespoons dried goji berries
4 red dates (jujubes), pitted
4 cups water or light vegetable broth
1 tablespoon raw honey (added off heat)
Pinch of sea salt
Instructions
Simmer: Combine pears, ginger, cinnamon, red dates, and water in a pot. Bring to a boil, reduce heat, and simmer until pears are very soft.
Add goji: Stir in goji berries in the last 5 minutes of cooking.
Blend or leave whole: For a smooth soup, blend until silky. For a more rustic bowl, mash gently and leave some texture.
Finish: Remove from heat, stir in honey and a pinch of salt. Remove ginger slices and cinnamon stick. Serve warm.
