Black Bean Soup

Ingredients (Serves 4–6)

2 cups dried black beans (or 3 cans, drained and rinsed)
6 cups water or low-sodium vegetable broth
1 medium onion, chopped
3 cloves garlic, minced
1 medium carrot, diced
1 celery stalk, diced
1 bell pepper, diced (optional)
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chili powder (optional for heat)
1 bay leaf
salt and black pepper to taste
1–2 tbsp olive oil
1 tbsp lime juice (optional)
fresh cilantro or parsley for garnish
3 branches of Epazote herb or 2 large pieces of Kombu seaweed

Instructions

  1. Prepare the beans:
    Rinse the beans and soak them overnight in water.
    Drain and rinse before cooking.
  2. Sauté vegetables:
    Heat olive oil in a large pot over medium heat.
    Add onion, carrot, celery, and bell pepper. Sauté for 5–7 minutes until softened.
    Add garlic, cumin, smoked paprika, and chili powder. Cook for another minute until fragrant.
  3. Cook the beans:
    Add the beans (soaked and cooked or canned), add bay leaf, and water/broth.
    Bring to a boil, then reduce heat and simmer for 1–1.5 hours until beans are very soft for dried beans (or 20–30 minutes for canned beans), Use epazote or Kombu to reduce gas or irritable bowel.
  4. Season: Add salt, pepper, and lime juice to taste.
  5. Serve: Garnish with fresh cilantro or parsley.
    Serve with warm bread, tortilla chips, or avocado slices.
