CANNELLINI WHITE BEAN & VEGGIE WINTER SOUP

This is one of my new favorite soups. It’s nutritious and delicious and a fantastic method to have all your ingredients in one pot. It’s easy to digest as all the ingredients are cooked and soft, while nutrient-dense.

Saute the veggies below for 10 min on low heat in 4 tablespoons of coconut or olive oil.

Ingredients:

2 carrots chopped fine
1 med onion chopped fine
1 tsp ginger chopped extra fine
2 cloves of garlic chopped fine
1 cup of cabbage chopped
1 cup of squash (butternut or other winter squash) chopped fine skin removed
1 celery stock chopped
1 cup of broccoli chopped
Handful of parsley chopped fine
½ tsp cumin
1 tsp oregano
½ tsp turmeric
1 tsp salt or as you like
½ tsp pepper
Add
5 cups of veggie or chicken broth
2 cups of cannellini beans precooked or from a can
Then let simmer for 1-2 hours. Add more salt, pepper, and parsley as desired. Enjoy!

Cruciferous veggies like cabbage and broccoli have powerful antioxidant and anti-inflammatory qualities and many benefits including hormonal regulation, aids in removing toxic waste products from the body, improves cardiovascular heart health, regulating blood sugar, Aids in digestion and elimination, helps in weight loss, Helps maintain blood pressure and reduction of cholesterol.

Onion, garlic, and ginger are all circulators and improve cardiovascular health. Given the high prebiotic content and antibacterial components of alliums (especially their carbohydrates and organosulfur compounds), it’s no surprise they can have a significant effect on the gut microbiota and will reduce the chance of many cancers.
